i forgot i have a question for you, oh wise flist.

do you have suggestions of things to eat for dinner that require little to no cooking? by cooking i mean use of the stove or oven. the microwave is fine. chopping and mixing is fine. i just cannot even contemplate the idea of generating more heat than is already in my environment. and yet i need to eat meals. you don't have to suggest salad. i came up with that one on my own. though if you have special favorite salad combos and ideas, i'd like to hear them. the other thing we've come up with is tacos. just microwave some refried beans, mix up a little guacamole and voila! a meal. no excess heat.

so, please. i would love some ideas. and no worries if they're not vegan. i feel confident that i can come up with a vegan version of just about anything. :)

i have something i eat 4-5 nights a week when it's hot out, it's kind of a raw quesadilla. it's not terribly original, but: take a tortilla, spread it with hummus and then layer some sandwich-type fillings (i layer deli meat and spinach, but you could veganize that pretty easy) and then fold it in half and you're done. it's really no different than a deli sandwich, but for some reason it tastes better to me.

oh, i like this idea. for some reason, sandwiches hadn't really occurred to me. i guess i was stuck thinking of them as lunch food. thanks for the suggestion! <3
