jjtaylor was interested in a vegan pancake recipe. so here's my favorite - vegan 'diner style' pancakes from the candle cafe cookbook.
1 1/4 cups sifted unbleached white or spelt flour (never tried the spelt)
2 1/2 teaspoons baking powder
2 tablespoons unrefined sugar
3/4 teaspoon fine grained salt
1 1/2 teaspoons egg replacer dissolved in 1 tablespoon soy milk (i think cornstarch - or potato starch or ground flax seeds - would work in place of egg replacer if you don't have it)
1 3/4 cups soy milk
1/2 teaspoon vanilla extract
3 tablespoons safflower oil (we usually just use canola) plus oil for cooking the pancakes
1. In a large mixing bowl, combine the flour, baking powder, sugar and salt. In a separate bowl, combine the dissolved egg replacer, soy milk, vanilla extract and oil. Mix the flour mixture and the egg mixture together, stirring well to combine.
2. In a large skillet over medium-high heat, heat some oil. Drop large spoonfuls of batter onto the skillet, leaving room for the pancakes to expand. Cook until the bottoms are golden and bubbles are popping on the surface, about 2 to 3 minutes. Flip the pancakes and cook until golden. Repeat etc...
-my fannish geekery comes into occasional conflict with my general aesthetic sense. does anyone else have this problem? what do you do when you suddenly have 18 lotr action figures and nowhere in your house to put them? mostly, i've ended up corralling all my fannish things in our study. but the new action figures i got for christmas are presenting some problems. the study just isn't that big.
