today beats every day last week put together. so far. ok, not really. bc i had fun friday night and saturday afternoon and sunday. but, except for those. yeah.
since i've already been pimping pumpkin recipes today, i thought i'd say a word about seeds. recently, after pureeing pumpkin for use in muffins etc, i was about to cook the seeds and i thought, hm, my pumpkin seeds never come out quite as well as i'd like. perhaps i'll see what didi emmons has to say about this. and i followed her advice and omg, yay! so much better. i'd been cooking them too hot too fast.
here's how she says to do it: put the seeds straight from the goop onto the pan - nothing added. bake at 325 for 20 minutes. then add olive oil and salt (or whatever spicy yumminess), mix around and bake for another 40 minutes at the same temperature. and they will be crispy and yummy and perfect!
