last night i had a salad with spinach and grilled tofu and apples etc. and i made a dressing for it that went perfectly with the apple. so, i figured, the days of apples aplenty are approaching and thus i will share, in case any others are inclined to put them in salad.
maple-dijon dressing
5 TBSP olive oil
2 TBSP apple cider vinegar
2 tsp dijon mustard
2 tsp maple syrup
1/2 tsp salt
1/4 tsp black pepper
whisk it all together. from ted on queer eye, i learned that drizzling the oil into the vinegar very slowly while whisking vigorously will keep it from separating too much later. it worked really well.
