i forgot i have a question for you, oh wise flist.

do you have suggestions of things to eat for dinner that require little to no cooking? by cooking i mean use of the stove or oven. the microwave is fine. chopping and mixing is fine. i just cannot even contemplate the idea of generating more heat than is already in my environment. and yet i need to eat meals. you don't have to suggest salad. i came up with that one on my own. though if you have special favorite salad combos and ideas, i'd like to hear them. the other thing we've come up with is tacos. just microwave some refried beans, mix up a little guacamole and voila! a meal. no excess heat.

so, please. i would love some ideas. and no worries if they're not vegan. i feel confident that i can come up with a vegan version of just about anything. :)

hmm, salad is my first answer. my second would be, rice in the rice cooker isn't so bad, especially if you make a big batch and eat it with meals during the hot week. then some kind of protien - chickpeas are good on a hot day. then microwave some frozen spinach, and throw it on top of those with some fresh red peppers, or tomatoes, and some kind of peanut sauce. when i'm lazy, i just put a glob of peanutbutter on and reheat the whole thing so the peanut butter gets gooier. also, throw some roasted cashews on there too. and anything else (mung beans? um, cucumber?) that happens to be in your fridge.

wow, i make that sounds so appealing, huh? but seriously, i could eat this thing practically every day, as long as it had the rice-peanutbutter-spinach combo as a base.

i also HIGHLY recommend putting fresh basil all the fuck over everything. having a sandwich? BASIL! salad? ton of BASIL on top! toast? BASIL! it makes everything tastier and is one of the reasons why suffering through the heat is worth it - so we can have good basil. and tomatoes that don't taste like cardboard. woohoo!

wow. you have clearly thought this through. i think we'll have to be getting ourselves a rice cooker. cause that sounds good to me (except for the peppers, hee).

mmmbasil. yes. i'm with you. basil and tomatoes help make summer bearable. to the extent that that is possible.
